Converters/interface....what do i need?

OK, I have spent the last few months on these boards researching gear for my home studio and I am getting there. I have some nice pres (great River, Avalon, API etc), compressors (API, 1176, LA2A etc), synths, mics, cables and a patch bay. I am going for excellent sound quality and will be working ITB with Logic. I am a newbie regarding all this and for the last part of the puzzle I need some advice......

At present I am using an M-Audio Profire 610 and I know this will not do my gear justice. I have been looking towards a Cranesong Hedd or Orpheus. Now, from what I believe these devices are just converters and not the whole interface package as the Profire is. I don't need great preamps in an interface as I already have decent ones and with either the Hedd or Prism that is the converter part solved, so my first question is where is the interface part of this puzzle, how do I go about that? I would like a bunch of ins and outs as I have a lot of outboard gear so if I were to go with the Hedd what else do I need to but to make this work.
Second (naive, I know) question is I don't want to be crawling behind racks to hook things up so I have bought a patchbay. Is it just a simple case of hooking all my gear into the back of this and having everything labeled on the front and needing nothing more than a short patch cable for joining two devices on the front (say, a preamp going into a compressor). When I come to get this sound into the computer I would, say, have the out of the preamp going to the ins of the compressor and the outs of the compressor into the patchbay then is it just a case of running L and R cables out from the patchbay into the interface ? I know this probably an idiotic question but i am not past this stage yet.
