PC's using VST's instead of Racks w/ Outboard gear?

I know there's a fairly large argument about vst's vs outboard gear for mixing, etc. And I know that VST's in real-time can cause latency's and such, especially if they get stacked, but this isn't about that so much.

I have 2 nice laptops here, aside from my main machine. I was thinking as using them as "Virtual Racks".

My idea is to perhaps use an Interface on each laptop.
Then I could load up a VST chain, including things like a limiter, compressor, expander, eq, etc. Standard rack gear, you'd have in your signal chain. Or other FX things like, Guitar Rig, etc. To use as a virtual pedal collection.

The output, would then be sent to my main interface, to be recorded.

How do you think the VST's would perform if used this way?

I figure my typical "Virtual Rack" would have 2 inputs (for stereo), fed from pre-amps.
Have 2-4 VST's running real-time, and sending the signal to my main interface.
