Amsterdam is no good. Hardly any audio stuff. 1 or 2 guitar stores. thats it. At least that is my experience. But maybe other slutz have more useful info.. Lots of fun!
I ended up byuing an electric ukulele and a mandolin - couldn't find any really really slutty places, except for the palm store, which was cool (strings and stuff).
Amsterdam has a lot of interesting things, but no gearstores. Enjoy what you will find there! Try to visit the Concertgebouw. There are a lot of microphones hanging there, but more importantly it is one of the best sounding halls in the world with one of the best orchestras. And if you are more into other music: visit De Melkweg, or rock temple Paradiso.

Dijkman on the Rosengracht is probably your best bet. But Amsterdam is not an equipment Mecca like London, New York or even Berlin.
Helios is for high end professionals (if that's you then great) and a bit out of the way..
