Congrats on the new place!

id skip the "acoustic insulation". Regular fluffly wall insulation is excellent acoustically. No need to pay for anything more than that.

Id also carefull remove the existing plasterboard to re-use it. Either in the wall bays directly fixed to the existing structure. Or in between the two layers your putting on the new walls.

The weak part of the isolation is the floor, you will likely have to add mass to it to keep up with the walls.

Further bass trapping at the rear wall, and the perimeter / corners where the walls and ceiling meet, is a good thing to plan on.
