Whenever you record the same event with multiple mics, in this case you performing, it's an invaluable tool. Great also for DI and mic signals of the same performance. The best thing is you can try the different options on the fly while the audio is playing.
Mixed a live in studio recording recently where a pair if room mics was intended as a major part of the sound because the set up in a way those mics captured a great image, kick and snare centered, guitars left and right. I used the polarity optimizer on all tracks from the live takes and the difference was massive.
