I need a new Mac

I've been using a really low spec Macbook for running my DAW in (I use Logic Pro 9 and Pro Tools 9 LE) and really need an upgrade. I'm looking for the best desktop mac for music for about £1000.

In Logic I write/make demos, using all the usual software instruments (some Arturia synths, NI B4 etc.) but nothing too sample heavy, and never record more than 8 channels at 44.1khz. I mix in Pro Tools, rarely using more than about 20 tracks (generally EQ and compression on each).

From what I can see I could get the 21.5 inch, 2.5 Ghz iMac, with these specs:
2.5GHz Quad-Core Intel Core i5
1920 x 1080 resolution
4GB (two 2GB) memory
500GB hard drive1
AMD Radeon HD 6750M with 512MB

Or a Mac Mini with Lion Server:
2.0GHz Quad-Core Intel Core i7
8GB memory (upgraded from 4)
2X500GB Serial ATA Drive @ 7200 rpm

Or this other Mac Mini:
2.7GHz Dual-Core Intel Core i7
8GB 1333MHz DDR3 SDRAM - 2x4GB
750GB Serial ATA Drive @ 7200 rpm

I can't for the life of me work out which of these would be ideal, so any help would be much appreciated.

the mac mini server is the most powerful by far . assuming you've got a keyboard , mouse and monitor its the cheapest option too.
