New Mac with 256gb SSD + 1tb drive - where to put data?

How do you do it folks?
I'm about to buy an new 27" imac i7 3,4ghz, 16gb RAM, with 256GB SSD and 1TB internal datadrive. I also have some USB HDD's on USB2.0.

I'm running logic 9 Studio with a lot of AU plugins like:
superior drummer 2, Omnisphere, Trilian, Waves Gold etc.

How is the best way to organize the installations, samples, files etc.?
Some take up more space than others, Logic and omnisphere is quite huge...
I'm also considering a piano plugin, not sure which one I will buy yet, but possibly Ivory2 or EWQL pianos.

Do you recommend an extra thunderbolt cinema display 27" or is one 27" with 2560 x 1440 more than enough?
