Motherboard capable of 32 -> 64 bit Upgrade? Gigabyte AM2 nVidia NF560

Hey all,
Currently planning on upgrading our studio, and mostly, our PC -
Based on a Gigabyte S-Series (GA-M56S-S3), it was a 32-bit system running an Athlon 64 X2 6000+ Am2 processor, with 4GB RAM, on XP.
I actually have a limited knowledge of PC's, i had someone build it for me, so i'm just reciting part numbers there.

I want to build a 64-bit machine on windows 7, running around 12-16GB RAM, and a pretty high-spec Quad core Processor. Figuring Octacore is way beyond what i need! But what parts would fit on my current motherboard? When we built the PC i remember stating i wanted it capable of 64-bit operation in the future, but i don't know what would and what wouldn't work with it!

use-age wise, it'll be running Cubase 4/5, mostly full-band sessions with a lot of plug in instances. Most sessions we did hit around 60 tracks. But we ran at 44.1 to avoid hitting the limits too much (which we still did now and then), but i'd like to be running sessions at 88.2 in all honesty!
