How to slow down and speed up a track in a Logic arrangement re remix query

OK, this may be an ignorant query but it's one that I'm clueless about...I've been asked to do a house/dance remix for a track where the client wants the track to start at a typical dance bpm and then slow down to the original track tempo 2 minutes in, then speed back up to the dance's an example...around 1.20 mins is where you'll hear this happening...

How do I do this in Logic 9? I'm clueless...

would be nice if you could do it with varispeed, but u can't. if you have a lot of audio tracks follow tempo gets messy.
