digigrid or apollo

hello ..

I would like to purchase products for my studio
it is a live studio, and home studio
I meeting with music band and we sing and record.
Currently, all I have is a mixer, (Dynacord powermate 600III), mics , stands , PA

and I would like to sell it.. i have also recording device for all tracks in one track.

Now I made my first move, which is buying Cubase 10.5 pro and learning about it,

now All I want now is to use Cubase as a mixer to manage these music sessions, record them in high quality, and use the waves , UAD plugins realtime ..
(Currently, I have not yet purchased any plugins until now.)

I want to start gradually by buying either a Digigrid iox or Apollo X8p
one of them for now and I will upgrade my system step by step
As you know, each one has a different system and different plugins
, if I buy Apollo, I will invest in their own plugins, and the same applies to waves..

I want to use Cubase and add the plugins from the same DAW
After finishing the live performance, I can easily amend it whether by , replacing, or amending it easily.
I don’t know which one is better in my case.

"would like to save my settings and use the same each time we are the same people and almost the same instruments"

Secondly, I don’t want to print the plugins in the same track.
I would like to freely leave it on some tracks and modify it in some tracks. as insert plugin

According to what I've seen in the videos, Apollo either prints or saves them in their console program
Then I put it back into my DAW as a new plugins
I don’t want that. I’m doing very simple adjustments and don’t want to
re-mix again from 0 when the session is completely over.

I do not want to print it in the same track as I cannot modify it after that.
I am wrong or didn't understand?

What are your experiences, thoughts and suggestions for a beginner like me?

I am fascinated by the plugins of the waves and Apollo as well,
and I don't care which of them I will use
