Sum it to mono. If the sound changes more than a little then you've got phase problems.

Exactly. That's the only time phase shift is audible. If a mix will never be played in mono, any phase differences are irrelevant. Indeed, phase difference is the basis for all of those "widening" effects.

Yes, except for phase differences smearing the sound (e.g. single drum mics) heh

That's still not phase shift alone being audible. Just the result of reflections from nearby surfaces bouncing back into the microphone.
