If I was to get only one mic (under 2k) for my home studio...

I moved this to low end as no one replied.

Used Neumann U87ai, Sanken CU-55, Milab 44, AT4047, a single Shoeps cmc6 with mk41..

Virtually a lot of mics below 2k are good to really good..buying used might be a good option.. You might get into the Manley Reference and the 2.5-3k mic range..
It really depends what do you want or what you want to achieve..
