Converter chips

Seeing as how converters have gotten so much better, has anyone ever attempted to change the converter in an interface? Or is it not possible?

Most converters have specific hardware and software interfaces, and they are not compatible between brands. So its not something that would be easy to do.
And if the device is working fine, why change it?

There are few with pin compatibility. New chip = new design.
