...dynamic mic located in the middle of the conference table be suitable? Something like an Electro-Voice RE50/B or an Audio-Technica BP4002? Or is there a better way to do this?

The BP4002 omnidirectional dynamic microphone is tailored for extremely clear and articulate reproduction of spoken words.
