A studio I used to go to used FastTrack Schedule and always was organized to the second. The software isn't meant for recording studios specifically but it can be used with great results. A little on the expensive side though.

I use Microsoft office. Excel can do anything. You could get someone to write some code to do online bookings that integrate into excel. This is probably cheaper than most database style software.

I think a lot of the larger studios use this:

StudioSuite 8

It's very comprehensive and made just for recording studios, but expensive.
