Here's a track that I recorded a while ago, with just an SM58. I record in a wooden shed in my garden, about 16 x 16 feet. At the time I was using a Behringer uca202 coming out of a Tascam Portastudio mk.III coupled with an M-Audio preamp (possibly the cheapest "interface" around). This was going into Audacity.
The drums are as basic as it gets (no toms, minimal cymbals), that's why one mic did the job. I positioned the 58 about 2 feet back, pointing between the snare and the kick drum. The kit is a Pearl Export, the only overdub I did drumwise was a few extra cymbal crashes.
I used my '96 Jazzmaster through a Fulltone GT500 into a Fender Princeton, again using the 58. There's about 5 or 6 guitar tracks, some with mild delay and chorus.
For vocals I put the 58 through an EHX Polychorus for the main vocals, any overdubs I did were put through a Nova Reverb pedal.
I'm pretty happy with how the song turned out, especially considering my setup at the time. There's a kinda evil Pixies/Autolux vibe to it.
