An open question and I'm sure you'll get your fill of answers.
From what I 'know', since that was your opening parameter......I have recorded my vocals through a wonderful Lawson 47. It was very full.
I use a Peluso 251 in my own place and it seems to be very open indeed, though not quite as full as the Lawson.

'Open and Full' probably has more to do with the ROOM and the INSTRUMENT than the microphone. Take a great mic put it super close to the source in a dead room and guess what you get? Hint- it is not open and full.

a 47fet type is what I'd suggest. They are full and rich, but don't sound closed up on top. AT4047, Advanced Audio 47fet or cm48...those would be my first choices...
