The importance of stereo recording...

I'm about to invest in some high quality instrument mics...

My setup would be used to instrumental movie scores and so far I've worked with other studios. I'm recording acoustic guitar, mandolin, ukulele, piano, drums, all sorts of instruments and sounds.

Earthworks QTC40s caught my eye through my many months of research. Some people have said they have high self noise. Anyone have problems with that? Also, would it be okay to only buy one of these?
To be honest, I don't feel like complicating things with true stereo images. Would this one mic do okay for drum overheads?

Anyone compare this mic to an SM81??

Lastly, would the QTC40 match well with an LA610???
Thanks for any suggestions. If you know of a better mic for classical, modern, instrumental, let me know!
