Where does that line come from? When you are testing a mic: testing, testing, one, two, sibilance....

I must know!

I have no idea...but if I have to run monitors and ring the system out, I listen to the tone of the "sssss" and see if it'll make things explode or not. If it does, to the graphic I will go!

I always liked "testicles testicles one two"

While we're at it, why do sound people always say "Check one, two" and not "check one, two, three"?

I'm not completely sure, but having endured many a live show soundcheck (as a musician, not as an engineer) I always got the feeling that the "one" is useful for hearing the low end and midrange of the vocal sound, and the "two" for the top end. The "t" in "two" often seems to point out potential ring problems in the sibilant range. Mind you, I've never heard anyone say that checking a mic in studio.

The SNL skit... Wayne's World with Aerosmith.
Tom Hanks played a roadie for Aerosmith and said that to test the mics.

That's where I heard it first.
