How far away from the U195 for vocals?

I would say that depends on the vocals (and, no, I have never used a u195, but I don't think it matters). Are they intimately whispered? You could get away with being a couple inches away. Are they shouted? Place them a foot or more away. I don't think the fact that it's a u195 as opposed to a BLUE Dragonfly, for example, matters much.

I know this sounds like a generic question but I read somewhere that it's best to be a couple of feet away from the 195. Just wondering how folks are actually using it.

Best for what, though? Each singer is different, so it depends on how much proximity effect you want etc... It is always best to play with the mic placement. The U195 is pretty versatile, in that you can play with the bass boost and and pad switches and different placements until the cows come home-- or until you find the right sound.

the U195 has a "Fat" switch that sounds a lot like added proximity effect- so maybe that's why some people are saying that. Near, far, Fat switch in or out, its just more options - you still have to try it out and listen.

yesterday, I used mine on a vocal track with the Fat switch off and the singer in really close and it sounded great.

The only I find it sounds good for me is in real close, about 2'
