Balanced vs Unbalanced - how do you tell?

An unbalanced 1/4" cable will have one ring on the plug, a balanced (aka TRS) cable will have two rings on the plug.

does balanced necessarily mean shielded? is it possible to have balanced unshielded cables?

All line & mic level cables are sheilded in some way. Might I suggest picking up a copy of the Yamaha Guide To Sound Reinforcement? It'll answer all these kinds of questions for you...
