Any comments about the audio quality via cat5 cable? i read that about phantom power mics will not work

It is really about installations, carrying line levels to different rooms. It is not meant to connect to preamps and power microphones. The transmition should be fine, depending on the location of the ground wire on the cat5 cable. If it is not centered, you run into the problem of magnetic inductance discrepancies and noise entering the signal chain.

Audio quality is probably not a problem, it is just using a different type of cable to carry an analog signal. It is not a digital processor using VOIP technology, which has its bandwidth limits.

If you want to use is as a stage box replacement, I would say no. If you had a local preamp or phantom power supply and sent the output to the box, then probably yes, you could use it. I'm sure you could use it just fine for headphone mixes.

I am interested to use it as replacement of a multicore cable between rooms. The cable will carry mic levels signals.

I have been using 'InstaSnake PA200 Series' from ETS Lan.

It's on the same concept of 'over ethernet'. It handles mic, line, digital, and even a mixture of those. 4 balanced channels for each box/cat5/e cable. It's just a passing way, no conversion.

My main use is a stage box replacement (mic signals), as I do mostly recordings in concert halls.

It's great for putting some mics away from the stage, in the audience, on the roof, ...

No problems whatsoever from 30 to 60m, on (very) hostile enviroments.

Surely it could be also great for fixed installations.

It sounds just the same as our analog/usual stage box.

We are using ETS Instasnake in fixed installations. If you need to send phantom you have to ensure the screen in the cable is connected. Normal Comms installers dont usually do this.

Thanks for the link. The cat 5 was used just as a replacement from what i understood. My thinking is to use a transmitter and a receiver and not the cat5 on its own.
