I'd go with at least two. I just upgraded to four. Two wasn't hacking it for the most intensive BFD sets. You should be all right with two, tho.

Is it possible to upgrade the RAM in MB Pro yourself, or do you need to specify it when you buy your computer?

You can do it yourself easily. its a little trickier on a macbook. You need to remove the battery and then proceed to unscrew the metal parts on the side. from there you can add/remove RAM. It was a pain on mine because one of the screws was stuck real bad and they are small so it was a bitch to unscrew... 2 gb is plenty i think...
