Do any of you do this?

I couldn't really think of what thread this may belong to but since it's computer related I figured I'd post here. Anyway, I want to convert my DVD seasons..etc to video files to store on a massive harddrive which would be on a computer in my studio's lounge to be used only for viewing these shows, movies, etc.. I have Mac the ripper and handbrake but I am not sure what settings I should go for as far as compression etc.. I use bit torrent a lot and I know that all the hour long TV shows are 349 MB. I like the quality of these videos and I want to shoot for something along these lines. Does anyone have any experience doing this? I am using a mac, but I imagine just knowing the resolution/compression/conversion settings would be all I need.
