setting attack for tracking vocals with art pro vla II

am checking out my first compressor..............tracked vocals with it yesterday, just put it on the mix bus .............wow this is fun..............am not getting a good feel for what the attack knob is doing............the song is very mellow (the water is wide.......think james taylor.........karla bonoff)...................can anybody please give me some thoughts about how you set attack and release when tracking and mixing mellow stuff......vocals, ac guitar and such........???
