Can someone explain what the difference is between 'mix mode' and 'record mode'???

On a specific desk?
In general... it just changes a few things.
eg. channel inputs in mix mode will be line in. In record mode they'll be mic in.
Output of tape/tools will feed the channel inputs in mix mode.
They'll feed the monitor returns in rec mode.
Do you have specific desk in mind? Or general answer like that what you're after?

In Record mode, I'm very precise and straightforward. I like to maximize my studio time, so I hustle, work long days, and eat carbs like a fatass. At the end of a day in Record mode, I stink, and my girlfriend has to wash me off with a hose.
In Mix mode, I'm more laid back, experimental, and drink less coffee.
You don't want to know about Edit mode.

On the desks I've used in the past, [Namely an E series desk with a G+ computer] Record Mode means that the Large Fader Follows the channel path, and the Small Fader follows the monitor path or tape returns. When in Mix mode, the Tape returns, or monitor path, is flipped into the Large Fader, and reversely the channel path is flipped into the small fader.

Sorry to post this, but RTFM.
Download a manua for whatever desk you're working on and learn the signal flow through and through. A lot of your routing options can change on top of the normal input switching and you can also cause some lovely feedback loops when switching.
Also the lights change from red to green.

Yes, but you have: VCA to monitor, that will flip the faders so you have smal fader to multitracks in rec-mode!
