I think these are 51 and 27 Mega Ohm Resistors, probably related to the bias of the capacitor (condenser)

Would changing them to higher quality components significantly improve the sound of the tube mic?

Highly doubt it. Likely those are biasing resistors with no impact on sound quality. If they were indeed in the audio chain, they would be a major source of noise due their huge resistance and no amount of substitution will improve it.
