I hear you! but I think it's because the people who listens to Eric Johnson is more "guitar oriented", do you know what I mean? People who play guitar (like me) is the most likely to know Eric's work. I guess that what I'm trying to say is that many of the greatest guitar tones comes from instrumental guitar music but obviously that's not mainstream so not so many people know those artists and their great tones.
