go for the intel mac. just make sure you get at least 2GB of RAM, doesn't have to be factory-installed..

there are still a number of plugins that are not Intel-ready but the majority are there or are getting there.

the new macs are blazing fast; even an iMac would be suitable for most tasks on m-powered or LE i would think.

are you looking to get a tower (Mac PRO) or desktop (iMac)? one thing to consider is that the iMac has no PCI-e slots (which you would need if you want to get the UAD plugins)...
