Ok I've been through a LOT of SD pairs:
- Neumann KM54c (not harsh but too bright)
- KM84 (nice but couldn't be bothered to pay the inflated prices)
- KM184 (too harsh)
- Gefell M592 / M70 and M690 / M94 (cool vintage sound but really didn't work on too many things, and I was never able to find well matched capsules)
- Line Audio CM3 (definitely unhyped but the lower mid range is odd and low output)
So I've just got my hands on a pair of Beyer MC930s => BINGO!
Case closed, nuff said!

I just LOVE how well the mid range is translated, great transient response.
Super hot output too, this is going to save my ass when using noisier older preamps for extra color.
