The answer is that THEY DON'T!
(They pick up exactly the same things.)
The difference is that those microphones are not directly connected to your BRAIN.
...If you really want to grasp this truth just a little more firmly, try tightly plugging just ONE ear, and searching for the right place to put a microphone on a real instrument in a real room.
(You'll catch on.)
