clearing out the middle means pan things. General guidelines for location of elements in a mix can be: kick centered, snare centered, bass centered. As for other elements such as high hats, synths, strings, etc pan them around the stereo field. Go left and right. There are also some pseudo stereo techniques he applies to "clear out the middle" which help establish depth and distance, but i think these may be a bit in-depth for you to comprehend at this point. Stick to the basics. Get a good grasp of them and then try to understand psychoacoustics
