I think your brain compensates to a certain extent.
I only have damage in one ear ( dip between 3 and 7 K) and I don't think it affects my mixes.
You have damage in both ears though, that might be different.. I have heard mixes with ear-splitting highs from deaf FOH mixers.
I just don't think EQ will work, your hearing/brain works more complicated than that I think (but I have not read into this subject)
