If I had to mix on headphones, the HD800s are the ones I'd reach for, no question.
But there are some fundamental differences to how we perceive sound depending on how it arrives at our ears, and all headphones change depth, space and balance perceptions in ways that are hard to 'listen past'.
Hence the need to cross-reference to speakers - as you've said you will be doing.
