I have had 18 STEREO tracks running on my iBook 600, in Logic Gold, under OSX through the headphone output, at 128 samples. 12 plugs, two of those Goldverbs, and still with grunt to go. Slightly more power available in OS9 running my Mbox and the Propagamma driver. ALL off the internal hard drive too. Pretty neat huh? As far as VSTi's go, EXS is great, can run heaps of them, but automation and filters can drag your performance down quickly.
I use my iBook like 24 track tape. All off the internal drive, when I fill my tracks (and believe me it will still be playing back fine) I bounce down. It keeps me from adding tracks for the sake of adding them. The only downside? My iBook is white, and my Oxygen8 is silver, so perhaps I should get that Powerbook for aesthetic reasons...
