help me build my live room (construction materials)

hello,
my next project (to start in the spring) is my live room. it is 26' x 21' with a 17' ceiling (at the peak, see picture attached)
right now the room is gutted and insulated. I will not be doing double walls, the room is in a pretty quiet location and I don't think that I will have the budget to do that. The room is the 2nd floor of a 130 year old barn. the floor is floating by way of beams/iron rods coming from the center of the peak (as seen in pics)

so I realize that it needs a hardwood floor. Are there certain kind of woods that sound better or are there certain kinds that I should avoid for one reason or another?

unfortunatly because of the size of the room, I think I might only be able to afford to do the floor in wood, the rest of the walls might have to be blueboard/plaster. I have heard that plaster sounds better than sheetrock can anyone confirm this?
