It is simply a preference. That is my current setup, although I do want to upgrade to a second 23" soon.
I currently have a 23" for my main screen and a 17" off to the side as a sort of "sidecar" monitor. I like the wider aspect when looking at the editing windows in ProTools or Nuendo. It doesn't really bug me to have a small screen for the mixing windows as much, so sometimes I'll put that onto the 17".
A buddy of mine has the 30" from Apple, and for me it was very hard to look at. I often times lost where the mouse was, I had to turn my head to look from one side to the other . . . . so I guess there is such a thing as a screen that is "too big".
I like the Apple screens, but Dell I hear makes some good ones at decent sizes too for much cheaper.
