I agree with you about "Oh, Mercy". It is a wonderful album.
I remember reading an article at the time (I think it was in MIX) about the recording of it. The vocal chain was a Sony tube mic, Neve 1081 and an LA2. On Dylan's ac guitar they had a soundhole pickup that went to a little amp in another room to get isolation. The preamps were various Neve and API but the mixing board was a TAC Matchless.
