Personally, with an application as complicated as a DAW and an OS and all the applications that go with it, I'd wait 6 months to 1 year for let things settle out. My next move will be to 64 bit, but that won't be for some time. Some of the audio applications I want to run are not native 64-bit yet.
I just found out the other day: Windows 7 Home will only address 16GB of memory (artifical limitation, apparently). Windows 7 Professional doesn't have this restriction. So, I'm just going to keep learning for a few months, and watch for native 64-bit versions of applications to become available. Also, I don't like using version 1.0 of 32->64 bit-converted applications, either.
They don't call it the bleeding edge for nothing.
I was in software development for years - this stuff isn't easy. And the financial temptation to release software before it's ready is real.
I've been using XP, and haven't had any significant problems - except I'm always aware that the 3-4GB limit is there.
Note: I don't consider myself anywhere near an expert on DAWs or OSes. This is just my 2 cents. And that's probably what it's worth...
