you should try getting the espresso with "correzione" at that time.
That means putting a tad of your favorite 'alcool' in it.
Cognac, sambuca..i usually go with Bacardi...
That does not kill all the caffeine but helps somehow to
smoothen up its effect. i'm italian and i could drink
espresso and sleep as a baby anyway..but in the
evening and after dinner i really like the " corretto".
In Tuscany we use the small glass cup and you
pour the rhum or whatever first and then you do the
espresso on it so it comes very hot and well blended.
Another technique is to use the vapor pipe of the espresso
machine, the same you use to cream the milk for cappuccino,
and give a few shots. Must be really hot and blended...just
the smells is a trip..if you use Bacardi a small twist of lemon
is quite a great add.
