Record 2 mono tracks -- one for your middle mic, and one for your side mic. Duplicate the side mic channel. Invert the phase of one of the side mic channels, and you're done.

(To invert the phase -- there's a couple ways. One is to go into the channel editor -- that 'e' next to the track name in the upper left when the track is selected in the project window -- and do it there.)
