I would use the ULN-2 on the M160 overheads. They're certainly the quietest mics in this setup and will require the most clean gain. Your other mics will probably not need more than 10-20dB of 2882 gain.
If at all possible get a third M160 for the rhodes cab, this is my absolute favorite microphone for putting on anything from a Champ to a Twin, especially when Rhodes is involved. But if cost is really a hindrance, the 57 will do.
Does your upright bassist have a pickup ? if so, do use his signal into an instrument input on the 2882 along with D12E mic. Upright mic'ing with no direct signal can be a bleed nightmare in a live setting.
