I don't really think there's a reason to kill your dashboard.
Once opened it will use a bit of ressources until you log out, so simply don't activate it during a session.
Macs are generally happier if you don't treat them like a Windows system. No need to tinker with a dashboard killer or other 3rd party tinkertools.

For the dashboard, see above. For iTunes Helper, open System Preferences and select Accounts. Remove iTunes Helper under Startup Items (press the minus sign). It's really insignificant though and you're removing functionality.
