I think your orientation is fine if it provides the best symmetry at the mix position, but that room may be tough in general because of the shape. You're sitting right up at the peak of the gable, so that means you've got maybe half the volume of a rectangular room with similar dimensions. You need to treat along the peak of the ceiling, but if you do that you probably won't have enough space to sit at the listening position.
I think all you can really do is treat the back wall, corners and reflection points as well as you can. If you're planning to build more panels, I wouldn't bother with anything less than 4" throughout the room. Try to treat the angled ceiling at the listening position if you possibly can.
