I would say that I was most influenced by stuff I heard when I was between 7 and 12 years old:

1. The Beach Boys - Good vibrations, I can hear music, etc. I was very impressed by the fullness and coherence of the sound - as well as the great arrangements.

2. Elvis - a song I don't remember and have been looking for for years, it has a clavinet bass riff at the beginning, I was floored by the sound when I heard it when I was about 7. Anyway, whatever you think about Elvis, there are some great arrangements and interesting sounds.

3. The Beatles - Revolver (the LP, there were no CDs back then, and I am not very fond of the mastering of the CDs). This album is so coherent, both musically and sound-wise.

4. The Band - The Band

5. Newer stuff includes Radiohead (too loud, but in a rather good way), Lizz Wright - Dreaming wide awake, The Roots, Buena Vista... well, it's time to stop.
