Sorry, I probably didn't explain it so well but to have your mix near enough there with all faders at 0 is simply a result of optimum gain staging (i.e. adding as little additional noise to the chain as possible), and that is achieved in a large part by having your faders at 0.
Why add more gain and noise to have a hi-hat recording at 0vu when you are only going to have to turn it down 10dB come mix time?
