I recorded a Gospel Choir in Kansas City about a year ago with awesome results but it was a bit smaller than yours. When you say one voice, you mean all of the singers will be in unison on the first pass???

If they are singing different parts I would try to split them up a bit, 1 mic on Sporano's, 1 mic on Alto's, 1 mic on Tenors etc. Set them up as they are comfortable, usually a semi-circle, and then put your stereo pair up as an overall Stereo Picture to capture the whole group. Then you can re-use that stereo pair for the individual overdubs of parts. Doubling the 1st pass might be desireable as well.

Grab your 1 best microphone for the soloist and make sure you've got some decent compression because they tend to whale a bit.
