Well... Morgana emulates a digital sampler, so obviously it would sound somewhat digital? But if you play around with the preamp and filter section I'm sure you'll find lots of analog sounding goodness there as well.

There's velocity to Attack/Peak/Sustain/Release and pitch to Decay, for both the VCA and VCF envelopes--Morgana's main philosophy is one of immediacy, and we figured these are the most useful routings. As for LFO functions Morgana has LFO to VCA/VCF/Pitch with independent depth. And almost everything can be controlled from MIDI through a very immediate--there's that word again :)--MIDI learn function.
