The Digidesign Databases folder is something that protools has created....it has seen the EuControl disk image as a drive and has created a database for it....you can completely ignore this.....and you can see this if you quit protools and then mount a newly downloaded Euphonix disk image...the Digidesign databases folder will no longer be there.
As far as the others go......from my understanding the Install EuControl is the only one you want to install.....the Eucon Workstation is for installing software that allows a second workstation to communicate with the MC Mix....therefore you should only really install that on a second system.
