I just tried using a noise profiler (free!) to eliminate noise just as you describe...works great!!! Just get a somewhat long noise profile with some empty recording, as the above poster mentions.
I noticed though that the effect is better if you tailor the noise reduction plugin to each channel rather than the mixdown (if you are using more than just a stereo pair).
